Job Description
- To control the Food & Beverage Costs.
- In charge of Menu Engineering in terms of costing
- Prepare variance analysis for food & beverage and communicate/discuss with relevant parties.
- Coordinate with restaurant management and finance to sort out issues pertaining to F&B.
- Update selling prices in POS as per the instruction from authorized persons. Make sure all item codes are linked with Micros & MC.
- Check the daily Food & Beverage revenues report submitted by the Income Auditor for accuracy of covers and average check.
- Check and ensure all menu items have a recipe
- Participate in stock-taking in all the outlets.
- Reports on monthly cost statements, recoding of consumptions, and Journal voucher entries for accounts.
- Must be organized & ensure cost reports are compiled accurately and on time.
- Strong supervisory skills with a hands-on approach and lead-by-example work style.
- Commitment to delivering exceptional guest service with a passion for the hospitality industry
- Ability to find creative solutions with proven problem-solving capabilities offering support where required
- Personal integrity, with the ability to work in an environment that demands excellence, time, and energy
- Provide an effective auditing system for the activities of the Materials Management Division. Provide a summary of the costs required by various people in the Accounting and Control Division to prepare daily and monthly reports. Provide Heads of Departments with the cost figures necessary for them to operate their individual profit centre profitably.
- To prepare daily the Comparison Report on Food & Beverage Actual vs. Potential costs/sales.
- To reconcile the cost of all officer and entertainment checks and apply credit to the respective departments.
- To be entirely flexible and adapt to rotate within the different sub-departments of the Accounting & Finance Division.
Candidate profile
- Minimum 2 to 4 year experience in a similar role
- Luxury resort experience would be an added advantage
- Highly motivated with "can do" attitude
- Team player and flexible for the operation
- Capable of living in a small multicultural environment
